BBQ Pulled Pork Stuffed Sweet Potatoes

So these stuffed sweet potatoes are ‘filled’ with  pulled pork cooked in barbecue sauce, then topped with sour cream and green onions for a quick weeknight main dish that will impress your family and friends 🙂

Makes 8 stuffed sweet potatoes skins *

Ingredients:

2 – 3 lb pork roast or loin

½ cup chicken stock or water

4 large sweet potatoes

½ cup BBQ sauce + some more for topping if you like

1 red onion, sliced

1- 2 tablespoons butter or EVOO

salt and pepper, to taste

Topping ingredients (can be anything you want): Cheese extra BBQ sauce, guacamole, avocado slices, cilantro or parsley

DIRECTIONS:

Time to break out the crockpot.. (and alsoPreheat your oven to 400).

*Put your pork in a slow cooker along with the ½ cup of chicken stock or water. Salt and pepper, to taste. Cook Time/ Temp:  low for 6-8 hours or high for 4 hours.As soon as pork is done cooking, shred it with 2 forks and then add in the ½ cup of BBQ sauce. Mix until well combined

*Bake your sweet potatoes until soft, about 40 minutes (or longer depending on their size).

Once they are cool enough to touch, cut them and scoop the insides out in a bowl to make our mash.  Season with salt and pepper. Set the mash aside.

Put the potato skins and place them on a greased cookie sheet, cut side down. Brush the skins with oil or butter and sprinkle some more salt and pepper on them. Bake for 13 – 15 minutes until Crispy!

While those are crisping up, caramelize your red onions with some butter or oil in a frying pan, about 10 minutes. Set aside.

Once the potato skins come out of the oven,  fill each skin with about 2 tablespoons of the sweet potato mash, add on the BBQ pork. Top with your caramelized onions, cheese, sour cream and any herbs you like or any extra toppings you wish (perhaps bacon). ENJOY!
