Avocado Breakfast Pudding

Yes, I know what you are thinking….

I admit, I did first come across this on Keeping up with the Kardashians. Kourtney, the little granola mommy she is, made this in an episode and I just kept thinking, what a great idea, especially considering how much I love avocados. So I went on my google rampage and ended up finding so many recipes claiming to be the “Kourtney Kardashian Avocado Pudding.” Yeah, I know-If I downloaded her app and paid for it I could have gotten the exact recipe but I’m a rebel and decided to go through some trial and error. In the end, I ended up finding /meshing some recipes together and tweaking it to one that best suited my palette. So here it is….

Ingredients:

1 organic ripe avocado

1 tablespoon ground chia seeds

1 teaspoon organic vanilla extract

1 cup almond milk (I use the vanilla flavored one)

1-2 tablespoons of organic raw honey (depending how sweet you like)

1/4 tsp organic cinnamon

Directions:

Literally all you do: blend it all together. Done. Seriously, I use my nutribullet, but you can use ANY blender. I also personally prefer this chilled, so I refrigerate for at least 30 minutes to an hour before eating. It is smooth and satisfying and the most perfect breakfast pick me up. Like my chia seed pudding, I share this gem w/ my daughter and she LOVES it. Its super kid friendly, but if younger then 1 year, I would cut out the honey/ check with your pediatrician first. I swear she thinks she is eating dessert for breakfast.

Avocados are a good source of pantothenic acid, dietary fiber, vitamin K, copper, folate, vitamin B6, potassium, vitamin E, and vitamin C. They also serve as a great base for so many things. Lets open our avocado horizons and not just slice them or make guac! They are such a triple threat. Savory, Sweet, and many health benefits. Hope you love this as much as I do!

*little bonus trick, add some cocoa powder and tell your kid its chocolate pudding.. Your Welcome.
