Baked Over Easy Egg Puff Pastry

Egg Puff Pastry
Egg Puff Pastry ( sprinkled the top w/ extra cheese because I like it Cheesy!)

Prep Time: About 5 minutes minutes Cook Time: About 20 minutes, This will serve 4 people.

All-purpose flour, for dusting
1 sheet frozen puff pastry, thawed
2 strips bacon
1 1/2 cups shredded havarti cheese
4 large eggs
Salt and freshly ground pepper
Chopped fresh chives, to top after

Start by preheating your oven to 425 degrees F. Use 2 baking sheets and line both with parchment paper. Roll out the puff pastry into a 12-inch square, then cut into 4 equal squares ( flour service to avoid sticking). Fold the edges to make “shells” and puncture pastry all around with a fork. Bake until golden, usually-8 to 10 minutes.

Let the tart shells cool on the baking sheets. Top with your shredded Havarti ( Can use Fontina- Gouda as well) and crumbled bacon pieces. Crack 1 egg per pastry. Bake until the egg whites are set, 10 to 15 minutes. Top with chives, or whichever herb you prefer.

Notes: You can add whatever toppings you’d like!
