I found this great recipe for Chia Seed Pudding and to be honest there is a GAZILLION variations in regards to flavors. Every flavor for every pallet. I don’t foresee finding a flavor you like being a problem lol. I love it because it is a few things:
- Kid Friendly
- Make ahead
So you can make these ahead for the week and I love sharing mine with my kiddo. I just double the recipe. I started with the “Mocha” flavor so I could get my coffee kick in the mornings. My daughter loves the Chocolate (same recipe as below just minus the instant coffee). I also bought this Spicy Chai Tea Latte Mix and Matcha Green tea Mix from Trader Joes to try those out this week and will update you on the yummy level w/ those flavors.
Serving Size : 1 person
1/2 cup almond milk
2 tablespoons chia seeds
1-2 teaspoons coconut palm sugar, depending on how sweet you like
1/2 tsp instant coffee
1/2 tsp cocoa powder
1/4 tsp cinnamon
Mix all the dry ingredients together 1st, then add almond milk- mix well. I like to put these in mason jars (its cute and convenient). Go ahead and refrigerate for about 10-15 minutes, then stir/mix again so the chia sees break up. Then refrigerate overnight. How EASY is that? Just take out and you can top with whip cream or yogurt, sprinkle with cinnamon and your ready to eat 🙂 So basically you get your coffee fix + breakfast in 1 step. This is the prefect breakfast pick me up if you are a ” on the go” type or even people (like me) who like to prep for the week.
Health advantages of chi seeds: Packs some energy boosting properties as well as digestive health, heart health, linked to helping improving diabetes, bone health, immune system support. These are just to name a few. They are said to have as much calcium as a glass of milk and as much antioxidants as blueberries. My kid loves them! (she’s 15 months- always check with your Pediatrician first).
